Why ferment your foods?

Fermented foods are the safest foods to eat; they are packed with flavour and contain tons of essential nutrients, vitamins, minerals and good bacteria.

They are cheap to make and so satisfying that you will save lots of money from your grocery bill.

What’s the connection between fermented foods and your immune system?

Your gut/gastrointestinal tract houses 85% of your immune system.

It is also the home of 100 trillion bacteria that live there.

These bacteria can be either good or bad.

When you don’t have enough good bacteria a wide range of health problems can appear, including allergies and auto-immune diseases.

Once you suffer from a major illness, say cancer or arthritis, you simply will NOT be able to get better without healing your gut.

Fermented foods heal and seal your gut.

How can I heal my gut?

It is easy to heal your gut.

All you have to do is eat a small portion, e.g. a teaspoon of fermented food or drink each meal for the rest of your life.

How can unhappy gut bacteria make you fat?

Scientists have discovered that gut microbes play a large role in your metabolism.

When you have too many bad bacteria this creates a hostile environment in your gut.

Then there is a negative change in your metabolism which results in the release of endotoxins, which causes the overproduction of insulin.

This makes you feel hungry all the time, so you eat more, which increases fat storage, obesity and inflammation.

The endo-toxins produced by your own unhealthy gut environment triggers widespread inflammation.

This is because these noxious toxins erode the lining of the gut so now you have leaky gut.

Toxins and foodstuffs leak directly into the blood stream.

When these toxins reach the brain it affects everything in your body.

Your personality changes for the worse, your metabolism slows down and even your hypothalamus gland is affected.

Your hypothalamus gland is the master gland of the body and is in control of all your hormones.

A sluggish confused hypothalamus doesn’t help you to lose weight!

How do good bacteria stave off old age?

Other studies show that a disturbed gut flora contributes to accelerated ageing, frailty and premature death.

The reverse is also true: by looking after your menagerie of micro organisms and making it flourish by introducing a daily regime of cultured foods (e.g. kefir, yoghurt, sauerkraut, kimchi) your body will be as new in 11 months.

Every 11 months your body is 98% regenerated and fermented foods help to rebuild collagen, muscle fibre, brain tissue and your bones.

Even your eyeballs improve with improved nutrient intake.

The beauty is that you have to do nothing yourself, the good bacteria start doing all the work as soon as they enter your body.

They keep digesting your foods, releasing nutrients and munching up rubbish until they have reached the other end where they end up as compost in your toilet.

Can I overdose on good bacteria?

Knowing what we do now about good bacteria it is easy to see that it is almost impossible to overdose.

Our ancestors thrived on an abundance of fermented foods.

The Romans gorged on sauerkraut to give them the upper hand over surrounding nations; in ancient India, they drank lassi (a probiotic sour milk drink) to stimulate digestion; Bulgarians are known for their kefir which made them robust; Ukrainians consumed kombucha, sauerkraut, buttermilk and yoghurt; Asian cultures ate pickled cabbages, turnips, cucumbers, onions, eggs, fish and the list goes on.

Today we humans have lost most of the microbial diversity that used to keep our forbears healthy.

If you find that you react to fermented foods (skin rashes, nausea, diarrhoea, bloating, gas or headaches) it means that your community of good bacteria in the gut is very depleted and that you urgently need to enlist the help of a new army of good microbes.

Some people are so depleted that they feel nauseous even if they get a whiff of good bacteria.

The sicker you are, the more you need fermented foods to heal and seal your gut, but gentleness is the key.

Treat your gut like you would treat a newborn: with small mouthfuls.

Before you know it balance will be restored and a new sense of wellness will permeate your mental, emotional and physical being.

Isn’t all that sugar in Kombucha and Kefir bad for Candida?

The sugar in the kombucha and kefir is consumed by the scoby.

(SCOBY is an acronym for Symbiotic Community Of Bacteria and Yeast. In reality, the kombucha scoby looks like a mushroom and the kefir looks like crystal grains).

You can ferment the drink until all the sugar is used but that makes it very sour.

The key is to strike the right balance and Caleb shows you how to do this at the workshop.

The good bacteria that are released by drinking these surprisingly pleasant fermented beverages help to heal your gut.

The friendly bacteria will crowd out the hostile ones.

How much time do I need for all this?

This is one of the most common concerns we hear.

Fermented foods do need some prep time but this is a small sacrifice for the benefits you reap from eating your own fermented vegetables and drinking fermented drinks.

As your gut flora starts to recover your energy levels will go through the roof.

Energy equals time, so there will be more time to do all the things you love to do.

Fermenting is so much fun and the benefits so enormous that it is really a no brainer.

It even saves time afterwards, because rather than having to have to start your meals from scratch you can pull out your sauerkraut or kimchi and have half of your dinner prepared!

How do I start?

Now that you understand the importance of optimizing your gut health it’s time to start fermenting!

It’s super easy, but you do need to have some tools and a little bit of knowledge.

This is where the workshop comes in handy.

Caleb will share with you his fail-proof fermenting recipe book and take you through it step by step, starting with cultured drinks, and moving on to fermented butter, apricot butter and other delicious dishes, to be finished with making your own cultured vegies.

During the morning you will be sampling sourdough with fermented butter, fermented hommous and other dips, sauerkraut, kimchi, kvass and many more treats.

You will walk away very satisfied with your own jar of sauerkraut as well as a kombucha scoby and starter. This class removes all the fear and controversy around fermented foods.

While this workshop may only seem like a small step, in reality, it is a giant leap in the right direction!
