Most people don’t realise this, but happiness works a little like a thermostat. 

There is a set point inside you, often established very early in life, that determines how much joy, ease, nourishment, connection, and goodness you unconsciously allow before something inside you hits the cut-off switch and pulls you back into survival mode.

That is the bad news.

The good news is that this happiness ceiling is not fixed or set in stone.

It can be adjusted.

Just like a thermostat, you can manually turn it up, not all at once, but gently, incrementally, from a four to a six, from a six to a seven, from a seven to a nine, as your nervous system learns that it is safe to receive more goodness without losing control, without danger, and without payback.

This is something Pete and I have seen again and again over decades of working with people, and it is also something we have lived by ourselves.

One of the most surprising and beautiful things that happened when we opened the Purple House Kitchen back in March was that our own happiness ceiling lifted by a notch or two, almost without effort.

And then we noticed something else.

It was not just our happiness ceiling that shifted.

It was the happiness ceiling of the people who walked through the door.

Not because we were doing anything dramatic.

But because their bodies felt safe enough to soften.

Happiness is not just a mental state.

It is a physiological state that resides in the nervous system.

Did you know that your nervous system cannot relax, repair, digest, or heal when it is constantly under pressure, overstimulation, noise, rushed food, artificial environments, and invisible stress.

Purple House Kitchen was never just about serving food.

It was about creating an environment that quietly says to your body, You are safe here.

We wanted a place where food was not rushed, microwaved, or cooked in oils that burden the body, but prepared with care, attention, and respect for how the human system actually works. 

Because when the nervous system relaxes, something extraordinary happens.

One of the simplest ways to raise your happiness ceiling is to spend time in places that support your biology rather than fight it.

That is why spending time at the Purple House Kitchen has become such a powerful and unexpected medicine, not just for our clients, but for us as well.

It is why people tell us they feel calmer just being there.

And it is why we feel such a deep sense of responsibility for what we are offering.

Because food is not just fuel.

Food is memory, culture, and information.

Food tells your body what kind of world you live in.

And that brings me to something we are incredibly excited about:

We are now including locally/organically grown ancient grains in our kitchen.

Grains that have survived thousands of years without becoming extinct … that are quietly disappearing from modern food systems as profit takes precedence over nourishment, diversity, and resilience.

Did you know that when a food disappears, something is lost not just nutritionally, but also culturally and biologically. 

The next generation does not just lose the food, they lose the memory of it, that there was ever another way.

We are now working with emmer, rye, purple wheat, and Tibetan barley all freshly milled.

These grains are structurally different to modern wheat.

Modern bread wheat is a very complex wheat with 42 chromosomes, while ancient wheats like einkorn have 14 and emmer has 28.

This is not a marketing gimmick. 

It is a biological reality, and many people find that traditionally prepared grains feel gentler in the body.

But just as important as the grain itself is how it is prepared.

Traditional sourdough fermentation is a form of pre-digestion. 

It breaks down some of the harder-to-digest components of grain, reduces mineral-binding compounds, and creates bread that supports digestion rather than stressing it. 

We are not doing this because it is fashionable, but because we see how depleted people are.

We see mineral deficiencies, gut sensitivities, and nervous systems stuck in overdrive.

And we know that toxic processed foods are the enemy of your immune system. 

Our cook, Lisanne, is a magician; every day, she churns out masterpieces from raw ingredients.

Purple House Kitchen is open Wednesday to Saturday from 10 AM to 4 PM (Kitchen closes at 3 PM) at 47 Wilmot Road, Forth, right next to the Purple House Wellness Centre.

The Wellness Centre is open Wednesday to Friday from 9 AM to 5 PM, and our online shop is always open; with orders processed the same day.

We are deeply grateful that ancient grains like emmer, rye, purple wheat, and Tibetan barley have not disappeared, and that there are still farmers protecting these living foods. 

By baking with them and preparing them traditionally, we are helping keep food memory alive, so the next generation knows these grains existed and can experience how nourishing real food can feel.
